OKC part 2: canning

Our first stop on Saturday (after moving very very slowly in the morning) was the farmer's market in Edmond.
Nana and Popo picked up lots of yummy food for canning.
I forgot to take pictures of the process, but here's a batch of peach jam I helped with:
I also helped with some tomatoes. First we cut off all the bad parts.
Then we flash boiled 'em to get the skins loose.
Then into an ice bath for easy peeling of the skins.

Then we squeezed as many as possible into each jar.
And finished 'em up in a water bath canner.
My dad did most of the work while explaining to me what, how, and when. I was barely functioning at this point and had to take lots of breaks. It was fun, and I'm looking forward to canning a little myself. Maybe not this year, but I'd like to start making jam (like when the strawberries are $1/lb like they were recently). I brought a bunch of jars of stuff home with me, including some of the peach jam and whole tomatoes I helped a tiny bit with. My dad also does salsa, relish, other kinds of jam, potatoes, green beans, corn, sliced peaches, you name it. YUM!! It's so wondeful to have homemade stuff in the pantry!
